Ingredients
7 potatoes
1 large onion
1 bell pepper
2 garlic cloves
1.5 tsp salt
1.5 tsp pepper
1 tsp cumin
1 tsp paprika
1 tsp red crushed pepper
(Not in video - optional)1 small carrot (optional - shredded or thinly sliced)
2 or 3 tomatoes
2 tbsp tomato paste
2 cups of Chicken broth or vegetable broth
4 tbsp olive oil

1 tbsp of ground cilantro to garnish
