A popular West African tangy & savory-sweet Senegalese dish of browned chicken smothered in caramelized onions & olives ✨
👉🏾 Ingredients
Chicken
Black pepper
All Purpose Chicken Seasoning
Homemade Green Seasoning
Olive Oil
Yellow/ Sweet Onions
Dijon Mustard
Fresh /Thyme
Garlic Powder ( You can use fresh garlic, I have it in my green seasoning )
Vinegar
Maggi Seasoning
Carrots
Fresh Parsley
Pitted Green Olives
👉🏾 Steps
Season your chicken and onions ( you can actually combine and season them together when marinading, the longer the tastier. )
On medium heat, sauté & brown the chicken then set aside.
Cook the onion mixture until brown and caramelized. Add remaining ingredients then allow to simmer for about 15-25 mins ( until sauce is reduced to your liking ).
Serve with fresh white rice and enjoy!!
Take 2 : Chicken Yassa 🧅🫒 || I decided to make this dish again but this time
👉🏾 marinating the chicken & onions together
👉🏾 didnt use sweet onions, I used all yellow onions
👉🏾 using lemon juice instead of vinegar
👉🏾 using less water, making it less of a stew
👉🏾 I caramelized the onions more ( love this )
( I didnt add the olives because I ran out lmao )
My opinion from Take 1 & Take 2 :
👉🏾 I love the use of sweet yellow onions in take 1 because I feel like it balanced out the tart taste from acidity of the vinegar ( & although I enjoyed the use of lemon in take 2, I feel like it wouldve been better if I paired it with sweet onions ).
👉🏾 Caramelizing the onions more, helps bring out the sweetness! I will never skip this step again before adding the meat & liquid back in!
👉🏾 Although this is not meant to be a loose saucy dish, I love sauce so I love the additional added water in take 1, especially for the reheated leftovers! After day 1, the sauce will naturally thicken up, so the additional water helps maintain that same feel for the next 2-3 days.
( leftovers were delicious with a side of salad & sweet plantains! )
👉🏾 Vinegar or Fresh Lemon Juice ? Tbh I really enjoyed the vinegar version 😂 but I will try the lemon version one day with sweet onions and see if that will have a more balanced flavor to cut the acidity.
Overall I give take 1 a 9/10 and take 2 an 8/10!
