Rice Paper Dumplings
Makes 10
Ingredients - Rice Paper Dumplings
2 tbsp - grapeseed oil for cooking
1/2 cup - diced yellow onion
1/2 block - tofu pressed and grated
2 tbsp - soy sauce
3 tbsp - minced garlic
1 tbsp - minced ginger
1/2 cup - grated carrot
1/2 cup - grated broccoli stems
1/2 cup - grated cauliflower florets and stems
3 tbsp - soy sauce
1/2 tsp - coarse black pepper
1/4 cup - chopped green onions
20 sheets - rice paper
Optional Addition:
Whenever I have left over rice and I am making these I always like to add some rice into the mix. Its a great way to bulk it up and stretch it out if you happen to be making a lot or want to repurpose leftover rice !
Ingredients - Peanut Sauce
1/4 cup - smooth peanut butter
1/2 cup - hot water
1 tbsp - soy sauce
3 tbsp - lime juice
1/2 tbsp - maple syrup
1/2 tsp - sesame oil
1 tsp - rice wine vinegar
1/4 tsp - minced garlic or garlic powder
1/4 tsp - minced ginger or ginger powder
1 tsp - sriracha sauce
