Today am sharing this roasted butternut squash and quinoa with apples recipe, that tastes great, very comforting and healthy too.
INGREDIENTS
2 tbs avocado oil
1 medium butternut squash, peeled and cut bite size
1 tsp chai masala or use pumpkin spice
1 tsp honey
3 small carrots, peeled , cut bite size
1 red onion, peeled , dice medium
2 granny smith apples, washed , diced medium
4 sprigs thyme
2 sprigs rosemary
1/2 tsp kosher salt or as needed
1/2 tsp black pepper
For Quinoa
1 tbs avocado oil
1 shallot, peeled , chopped
1 tbs garlic, chopped
1 tsp ginger , minced
1 bay leaf
2 thyme sprigs
1 rosemary sprig
2 cups quinoa, rinsed, soaked
3 cups water
1 lemon juiced and zested
For the Pine nuts
1 cup pine nuts
1/2 tsp avocado oil
For arugula salad
2 cups ( handfuls ) arugula ( rocket )
1 scallion, greens only, chopped
1 granny smith apple, washed, diced
Pine nuts
1/2 tsp extra virgin olive oil
lemon juice and zest
salt and pepper to taste
