Meal-prep inspo! 🥗 Inspired by takeout-style “Chinese” chicken salad, this is the perfect balance of crisp veggies, tender chicken, and a tangy nut butter dressing. Recipe below ⬇️
// INGREDIENTS //
For the dressing:
2 tbsp rice vinegar
2 tbsp peanut butter
2 tbsp tamari
1 tbsp coconut aminos
2 tbsp sesame oil
Juice of 2 limes
2-inch piece ginger, peeled and chopped
1-2 garlic cloves, peeled and chopped
For the salad:
2 cups romaine or butter lettuce, shredded
2 cups cabbage, shredded
2 large carrots, finely sliced
1 cup sugar snap peas, sliced
2 green onions, thinly sliced
2 oranges, peeled and sliced
4 cups shredded chicken
1/4 cup toasted almonds or cashews
// INSTRUCTIONS //
• Add all dressing ingredients to a blender and blend until smooth. Taste and adjust seasonings to your liking.
• If prepping the salad in advance, store the dressing on the side and mix when ready to eat. When ready to eat, add all of the ingredients to a bowl, top with the dressing, and mix well.
