Essonne - Sushi with watercress and wasabi | At our Neighbour's Table

Vincent Barberon has a passion for aquatic plants. Like his father and grandfather, he grows watercress in water basins. The plants taste like a mixture of rocket and algae. Watercress is considered a 'superfood' because it is rich in vitamins and minerals. The water plant was originally brought to the greater Paris area from Erfurt in Germany. Its high vitamin C content was said to protect the Napoleonic armies from scurvy.

Vincent recently brought back an exotic plant from Japan: Wasabi. This new passion takes up all his attention, because the Essonne is not exactly the ideal growing area for wasabi.

Together with Patrice Barry, he is always creating new recipes such as a traditional watercress soup with pears. The freshly harvested wasabi makes the senses explode with trout maki. Last but not least, Patrice conjures up a special recipe, a feta and radish spread - with and without watercress. Just try it out!
