Description

Ingredients:Vade

•1 cup Urad dal

•Salt to taste



• Oil for frying

• Water

Sweet Tamarind Chutney•1/2 cup Tamarind•1 cup Gudh/ Jaggery•Water as needed•1 tsp Cumin powder•Red chili powder• Black Salt to taste•Salt to taste

Green Chutney• Roasted Chana dal•1 Green chili

•1 Garlic clove• Coriander leaves•Salt to taste

• Water as neededCurd for Dahi Vada•1 cup Curd•1 tbsp Sugar•Salt to tasteDahi Vada

• Cumin powder



Description

Method:

• Wash urad dal really good 3-4 times and soak it inenough water for about 3 hours.

• Drain as much water as possible from the soaked

dal and blend it into as fine paste as possible.

• Avoid use of water while blending. If needed, addjust 1-2 tsp water.

• Transfer the paste into a bowl and add salt.

• Beat it really good with hand or spoon until it turns

light and fluffy for at least 5 minutes.

• Heat up oil on medium heat.

• Wet your palm with water and roll vada with handand drop it in hot oil.

• Fry vade on medium heat until it gets nice goldencolor from all sides.

• When vade are fried well, take them out, drainexcess oil and transfer them into a dish.

• Soak the vade in water for about 30 minutes.•Squeeze out as much water as possible fromsoaked vade and keep it aside.

Sweet Tamarind Chutney

•Mash it well with hand and strain the pulp into apan.


•Soak tamarind and gudh in enough water for aboutan hour.

• Heat up the pulp and add cumin powder, red chilipowder, black salt and salt.

• Heat up the puip and add cumin powder, red chilipowder, black salt and salt.

• Mix everything well together and bring the mixtureto boil.



• Turn off the gas and sweet tamarind chutney isready.

• When the chutney cools down completely, store in aglass jar in freeze.

• It has shelf life of about 3 months.

Green Chutney

•Blend roasted chana dal, green chili and garlic intopowder in mixer and add coriander leaves, salt

and water.

Curd for Dahi Vada

•Blend everything well together into runny paste andgreen chutney is ready.

• Strain the curd through a sieve and add sugar andsalt.

•Beat the mixture really good and chill it in freeze.Dahi Vada

•While serving add some curd at the base in theserving dish and add vade in it.

• Cover the vade with curd again and sprinkle cuminpowder and red chili powder.

• Spread green chutney and sweet tamarind chutney.• Garnish with pomegranate seeds and dahi vada isready.
