Learning to Cook With Carbon Steel: How to Cook Breaded Vegetables

This cooking video shows how to cook breaded vegetables in a carbon steel pan with nice browning and no sticking. We bread and fry some Southern-style fried okra, and Uncle Scott uses a De Buyer Mineral B Pro 11" carbon steel skillet for this demonstration, however the techniques work equally well in Smithey, Matfer, Mauviel, Lodge, and other carbon steel skillets as well. These cooking techniques can also be used for a wide variety of breaded vegetables besides okra too.

Scott's Mom's Southern Fried Okra Recipe (in-depth video:    • How to Fry Okra: OFFICIAL MOM RECIPE!!  )
1. Prepare a dredge of two cups of self-rising cornmeal, a teaspoon of salt, a teaspoon of black pepper, and (optional) a shake of cayenne pepper.
2. Use this to flour up to a pound of cut okra.
3. Thoroughly and evenly heat a pan, add enough fat (beef tallow, olive oil, vegetable oil, or peanut oil) so that the oil level is half the height of the okra pieces.
4. Fry the okra, turning/flipping the pieces every two minutes or so for about eight minutes total, or until they are the color and crunch that you like.
5. Remove to a paper towel-lined plate. Work in batches if necessary.
6. DEVOUR!

To Make Self-Rising Corn Meal (if unavailable in your area)
Combine 1 3/4 cups regular corn meal, 6 tablespoons of all-purpose flour, 2 tablespoons of baking powder, and 1/2 teaspoon of salt.
