Poulet Yassa from Guinea.

Ingredients.
6 large onions julienned.
5 cloves of garlic crushed.
1 Tbsp red chilli flakes.
3 Tbsp peanut oil.
1 tsp salt.
½ tsp pepper.
3 chicken bullion cubes crumbled.
the juice of 6 lemons around 1 cup.
1.6 kg of chicken pieces with skin and bone I used 9 thighs.
1 bay leaf
peanut oil for frying.

combine all the ingredients in a big bowl cover and let it marinate overnight in the fridge.
the next day separate the chicken from the marinate.
heat up about 750 mll of peanut oil on high and fry the chicken for 15 minutes flipping halfway. Set the chicken aside.
-Remove and dispose ¾ of the oil from the pot. Add the marinate to the remaining oil and fry on med-high until browned for about 15 mins.
add 4 cups of water to the pot, mix cover and simmer for 30 mins.
add the chicken back and simmer for 5 minutes uncovered.
serve with rice and Enjoy
