To Make

Bitter Gourd - 1 Kg

Garlic Masala
Water - 2 Tbsp


Method


First, add two tsp of oil, three tsp of chana dal and three tsp of coriander seeds and two tsp of cumin seeds and roast well.
Once roasted, add fifteen cloves of garlic, a little tamarind, a few fresh curry leaves and fry for a while, turn off the stove and transfer to a plate and let it cool.
Transfer the roasted ingredients to a mixer jar along with 3 tsp of red chilli powder, half tsp of rock salt, quarter tsp of hing, one tsp jaggery powder, and pulse it to a nice fine powder.
Transfer the masala to a bowl.
Now cut one kilo of bitter gourds into medium size pieces and remove the large seeds, add one tsp of salt and one tsp of turmeric to them and mix well.
To a wide pan add 3 tbsp of oil, and add the bitter gourd pieces. Keep the flame on medium and keep stirring it for fifteen minutes.
Now add the freshly grind masala and mix well. This masala can be stored in a air tight container in a refrigerator.
Add 2 tbsp of water and let the masala gets cooked with the bitter gourd. Continue to cook for 5 minutes.
Delicious bitter gourd garlic masala is ready to be served with sambar rice, rasam rice and curd rice.
