This rice and mushrooms with vegetables stir fry or sauté follows that route for this sumptuous weeknight dinner or lunch.
INGREDIENTS
2 Tbs Grapeseed oil
8oz Whole white mushrooms, wiped and then sliced
8oz Whole Baby Bella mushrooms, wiped and then sliced '
1Tbs Garlic, chopped
1 Tbs Ginger, minced
1/2 Yellow bell pepper, deseeded , sliced
1/2 Red bell pepper, deseeded, sliced
1 cup Green beans, picked and in halves
Salt and pepper to taste
For the sauce
1 Tbs Soy sauce
1Tsp Rice wine vinegar
1/2 Tsp Chili paste ( hot sauce or chili flakes work too )
2 Tbs Ketchup
1/2 Tsp brown sugar or honey
3 Scallions, chopped for finishing and garnish
