Fish makes a perfect week night dinner packed with nutritious and healthy fats. This pan seared salmon with potatoes and sauteed vegetables is easy to make on any day of the week for a delicious meal.
INGREDIENTS
5 Pcs Salmon fillets about 7oz each ( about 200g ), skinless
1/2 Tsp Salt
2 Tbs Cooking oil / Avocado
1 Tbs Butter
1Tbs Garlic, chopped
1/4 Lemon juice
Lemon zest
8oz Cherry tomatoes/ medley, cut in halves
1/2 Frozen peas
Parsley
For the Potatoes and Vegetables
8 oz ( 225g ) Little potatoes or Yukon gold peeled cut bite size
8oz ( 225g ) cauliflower, cut into bite size florets
2 Medium carrots, peeled and roll cut
1 Medium zucchini, washed , cut into half moons
1 Tbs Garlic, chopped
1Tsp Dry oregano
Parsley to finish and garnish
